Chef de Cuisine & Founder — Hiromi Koshimizu
Hiromi Koshimizu trained for four years in France, in kitchens honoured with two and one Michelin stars.

Returning to Japan, he served as Sous Chef at Mal d'Amour at the Tokyo Bay Court Club, before taking the helm as Executive Chef of L'Art et la Manière in Ginza — where his cuisine earned a score of 14 from Gault & Millau and a Bronze distinction at the Tabelog Awards.

Today, under the name Hiromi Koshimizu Gastronomie, he devotes himself to the occasions that ask for more than a meal: important corporate dinners, the entertaining of distinguished guests, private dining and receptions — each one composed, cooked and served by his own hand.

We listen closely to your intention and your wishes, and propose a composition worthy of the occasion.

Consultation

We come to understand the purpose of the gathering, those who will be present, and the setting of the day. Beginning with your wishes, we open the field of what is possible.

Menu & Estimate

From our conversation, we conceive a menu for that singular evening. It is presented to you in writing, together with an estimate.

Confirmation

We review the details together and refine them as needed. Once everything is settled, preparation for the day begins in earnest.

The Evening

The evening we envisioned is given form through cuisine and service. So that everyone present may give themselves wholly to the moment, and to one another.

Questions & Answers

Frequently Asked


The questions we are most often asked before an engagement.
We hope they offer a helpful prelude to our conversation.

Primarily within Tokyo, extending to Kanagawa, Yamanashi, Shizuoka, Chiba and Saitama. For Karuizawa and other regions, we will gladly advise on availability once the date, the number of guests and the conditions of the venue are known.

For important dates, we recommend enquiring several months ahead. For nearer dates, too, we will advise on availability once the date, party size and venue conditions are confirmed.

As a rule, we reply within two business days. On days when we are working on site, we respond in turn upon our return. Having considered your enquiry, we will also tell you frankly whether it is one we are able to accept.

We adjust the content of the menu rather than the number of courses. Allergies, preferences and the mood you wish to create are all discussed together during our meeting.

A tasting may be arranged on an individual basis, depending on the content, the dates and the nature of the engagement. In our preliminary meeting, we learn the purpose of the occasion, the standing of your guests and the conditions of the day, and share our thinking on the cuisine in full.

We are delighted to propose wine — or non-alcoholic — pairings, composed around the menu and the company gathered at the table.

Not at all; everything is in our care. Once service has ended, we collect the tableware and equipment, clean the cooking area and manage all waste, leaving the space close to the state in which we found it.

We never disclose a client's name or the details of a venue without consent. The more important the occasion, the more there is to protect. In our meeting, we are glad to share — as far as we are able — the nature and scale of the engagements we have undertaken.

Even if the details are not yet settled, tell us the purpose, the number of guests and the timing, and we will guide you through what is needed, and how we proceed.
