Philosophy

What I Believe


A meal is the clearest means we have
of bringing people together. This I believe.

For twenty-six years I have devoted myself to French cuisine — from the important dinners of corporations to quiet evenings in the private homes of executives, I have stood in countless rooms. As a private chef, and as a cook specialising in fine catering, I have witnessed, again and again, the moment a single dish shifts the very air of a room.

Fine food, fine wine, and people gathered around them. When what is served is felt — not as an idea, but in the heart — to be genuinely good, something in that room invariably changes.

The instant someone murmurs, almost in spite of themselves, “ah — that is good,” the air softens even between strangers; smiles appear, and conversation begins to flow of its own accord. A meal has the power to warm a room, to close the distance between people, and to carry a relationship itself forward.

To bring that living moment into being, reliably, I face every ingredient and every dish without the slightest compromise.

My work does not end at the cooking. I listen closely for the purpose of the gathering and the intention of the host, and to realise the finest dining experience a single occasion deserves, I keep faith with the cooking — earnestly, and to the very end.

A meal is not an accompaniment to the occasion. It raises the value of the moment, it remains in the memory, and at times it gives rise to relationships that reach into the future.

So that the evening may afterwards be spoken of as “an occasion to remember” — this is what I promise to bring about, in the finest form I can, as a chef.

Career


1980

Born in Tokyo.

2000

Graduated from culinary college in Tokyo.

2004

Les Cristallines — a French restaurant in Minami-Aoyama, Tokyo.

Sous Chef in the final year of four

The start of his career. He studied service for a year before entering the kitchen, learning the foundations of guest care and a cook's stamina.

2004

To France. La Poularde — a one-Michelin-star restaurant.

Chef Saucier (chef of the hot-kitchen section)

Mastering French poultry and classical cuisine, he set himself the discipline of conceiving one new dish each day.

2006

La Table St-Crescent — a two-Michelin-star restaurant in the south of France.

Chef Poissonnier (chef of the fish section)

In an environment that demanded precision, he studied fish cookery and avant-garde cuisine thoroughly.

2008

Returned to Japan.

Active within the Les Cristallines group.

2010

Mal d'Amour, Tokyo Bay Court Club.

Sous Chef

Supporting the French head chef; responsible for the numbers and operations.

2015

L'Art et la Manière, Ginza. Appointed Executive Chef.

2018 — Gault & Millau, 14 points2019 · 2020 — Tabelog Award, Bronze

2021

Founded his own brand, Hiromi Koshimizu Gastronomie.

Moving beyond the restaurant, he developed a bespoke culinary service centred on private-chef work, catering and production — ongoing today.

2024

Produced the sustainable gibier venture, Jäger Inc.

Producing the food division — from kitchen design through to the menu — up to opening.

2025

Produced Expression Kawaguchiko, Lake Kawaguchi.
